Thursday, Aug 11: Stuffed peppers/squash
Slaw:
- Grate 2 carrots & 1/4 head cabbage
- Thinly slice small red onion,
- Heat 1/4 cup cherry vinegar & juice from 1 lemon to simmer
- Add 1 minced garlic clove, some lemon zest, salt, pepper, cumin
- Cook 1 minute
- Pour liquid over veggies and let sit.
